When is the sun going to come?

When I walked out to the car to go to school
it was starting to snow.
It has been snowing or raining for the
LONGEST time.
And I am ready for some sun!
I am so sick of this Snow and Rain weather.
I need the sun to shine!
So I am asking please with a cherry on top.
 Snow and rain go away.
Please let the sun come out and shine on us today!

Sunday Dinner

So I admit it.
I am not the best cook ever.
My mom always tried to teach me how to cook
when I was a teen but I always didn't want to.
Now I wish I took those cooking lessons.
Anyways, I have made a goal to myself that
I would cook at least one meal a week
to improve on my cooking skills.
I then will post what I made
with the recipe and the results.

To start this adventure I got a sweet cookbook
and picked our some recipes I want to try out.

Today we had...
 Root Beer Pot Roast.!
It wasn't bad at all.
It was actually good!
It had this sweet buttery flavor
and just melted in your mouth.

Table set for dinner
The Roast
In addition to the Root Beer Pot Roast
we had mashed potatoes with gravy and rolls.
We made the gravy out of the leftover root beet from the pot roast.
I actually liked the gravy which never happens.

My plate
Casey's Plate
I would request this pot roast to anyone that would want to try.
Here is the recipe:

Root Beer Pot Roast
1 5lb. Black Angus pot roast
Salt and pepper to taste
10 carrots, peeled and cut into chunks
Olive Oil
36 oz. root beer, room temperature
1 -2 onions, optional

Season roast on all sides with salt and pepper and set aside for 15 minutes while you peel and cut the carrots. Heat a frying pan and add just a touch of olive oil. Brown roast on all sides, just until you get that nice caramelized crispiness to the meat. Pour 1/3 of the room-temperature root beer into a slow-cooker. Add the meat carefully. Add the carrots and onions. Pour the remaining root beer over the roast and cook on low for 8-10 hours. Makes 10 servings.

My tweaks to the recipe:
Instead of...
10 carrots cut into chucks, I used about 2 carrots that were sliced.
1 -2 Onions, I used 1/2 of a sweet onion.

It turned out great.
I was proud of myself.
GO ME!

Wish I could..

Be in California right now.
Oh I miss it so much!
Family. Weather.
Beaches. Sun.
Disneyland.
No Snow!

Wish I could take a spontaneous trip with Casey to California
to visit our families, go to Disneyland and California Adventure,
spend some time at the beach getting a tan, and much much more.

Oh I wish I could...

Being an Aunt and Uncle...

This past summer Casey and I had the opportunity to live with my sister, Jessica, and her family in Bear Lake. We had a blast getting to know them more and getting to be close to her kids. We love being around her kids, as well as our other nephews and nieces. We just love kids. They are so fun to be around and always bring happiness into your life.

A couple weekends ago my sister and her family came down to celebrate his husband, Nathan, birthday. At night we babysat Tavis and Krya while they went out to a movie and dinner. It was a blast!

We...

Colored
Krya liked eating our color pencils.
Acted silly
"I have the best Uncle ever!"
"Hey Joy look what I can do!"
And making sure they don't hurt themselves.
Watched Kung Fu Panda
Both sitting watching the movie
(at one point they were sitting the same way with their mouths open)
Played dress up with my sunglasses
Sunglasses Theif
Showing off our sunglasses!
Baby model
Played the iPad and Wii

Krya trying to be like her big brother.
Hilarious to watch him or anyone play this game!

We had a blast and can't wait to hang out with them again! :]

Pillows Revamp.

I have been wanting to bring some color into our apartment. I am someone that loves neutural colors but I also LOVE bright colors (as you seen in our wedding). So I decided to make pillow covers for our couch. We use of have light brown pillows and I felt that it just makes the room look so plain since we can't do much to the walls except for put up pictures (which I have a project in-mind for that). I finally found the perfect fabric that I have been looking for when I was at Joann's looking for fabric for one of my projects for school. I told my mom about what I wanted to do but I wasn't able to do it since I didn't have a sewing machine and also I don't exactly know how to sew. When my mom came up to drop my brother, Alex, off at BYU I asked her if she could help me finish this project of mine. And she did. So we made these amazing pillows that I love! Thanks Mom for helping me! :]

Busy. Busy. Busy.

Life has been crazy busy since my last post. As you have read before I have a job now and am working and going to school. Casey is doing the same thing. So we both work and go to school pretty much every day of the week. I have only been working 2 days a week and going to school the other 2 days then on the rest of my days off I get to clean the apartment or get homework done. Casey goes to work at least 3 days a week then goes to school 2 days a week. So as you can tell we don't have a lot of time to just relax, hence the reason why I haven't blogged in a while. So I will be posting more soon. Promise!
